Who Eats Well, Lives Well

Growing up in an Italian family, I had the pleasure of eating fresh pasta on a daily basis. Memories of my mother, grandmother and aunts making fresh pasta are still vivid in my mind.  And the taste of perfectly sauced fresh pasta is at times almost indescribable!

It has been a lifelong dream of mine as a chef to offer fresh pasta and that dream is now a reality with the launch of Pasta Rea!  We recently purchased the finest imported Italian pasta machine capable of extruding 30-60 pounds of pasta per hour and producing over 26 different shapes.  I’m up to my elbows in flour these days and excited to share Pasta Rea!

    Bucatini

    Bucatini, also known as perciatelli, is a thick spaghetti-like pasta with a hole running through the center. The name comes from Italian: buco, meaning “hole”.
  • fresh cavatappi pasta, also known as "corkscrew" pasta
    Cavatappi

    Cavatappi, the Italian word for “corkscrew”, perfectly describes the spiral or helical tube shape of this longer form of macaroni pasta.
  • medium fresh conchiglie pasta
    Conchiglie / Lumache

    Conchiglie is more commonly known as “shells” or “seashells” in the United States. Conchiglie make a great addition to soups or as the base of a wonderful fresh salad.  Large conchiglie pair wonderfully with Bolognese sauce.
  • fresh fettuccine pasta
    Fettuccine

    Fettuccine is a flat thick noodle, wider than, but similar to the tagliatelle. Fettuccine literally means “little ribbons” in Italian, and is a type of pasta popularly used in Roman and Tuscan cuisine.

    Derived from the Italian word for “twins”, the shape of Gemelli pasta resembles a double helix, but is actually a single s-shaped spiral.

    Pappardelle are large, very broad, flat pasta noodles, similar to wide fettuccine. This pasta derives its name from the verb “pappare”, or “to gobble up”. Fresh pappardelle pasta is usually 2 to 3 cm wide.
